the gameplay options menu is to add in some quality of life, so for instance if You don't like the seasonal events they can be turned off and if the head bobbing during gameplay makes you nauseous then You can turn it down or up, and Safe mode is for new players who want to just experience the game without the hassle of trying over and over again.
