Not sure if this has been suggested yet.
So when we first enter Ruin's Pizzaplex, the wall is covered in newspapers that all say the Pizzaplex was ruined in an earthquake and was closed as a result. Obviously something bigger must be at play because I don't believe for a second that a random earthquake just destroyed the Pizzaplex by coincidence. Since the Mimic, who is extremely strong, has been sitting under the Pizzaplex trying to escape, I believe he probably caused this earthquake by powerfully shaking the foundation of the Pizzaplex. This was probably in an attempt to get one step further to escaping. Since the MXES was keeping him there anyway, he probably thought "well, at least I can destroy the building from underneath, maybe that'll get me closer to escaping."
