1960: Assistant at Iowa.

1961-1963: Assistant at William & Mary.

1964-1965: Assistant at Connecticut.

1966-1967: Assistant at South Carolina.

1968: Assistant at Ohio State. Won National Championship.

1969-1971: Head Coach at William & Mary. Went 3-7 first year, 5-7 second year, winning the SoCon conference and losing 40-12 in the Tangerine Bowl to Toledo, and went 5-6 third year. Overall Record: 13-20. 1 bowl game appearance and 1 SoCon Championship.

1972-1975: Head Coach at North Carolina State. In 1972, went 8-3-1, finishing #18 in the AP Poll and winning 49-13 vs West Virginia in the Peach Bowl. In 1973, went 9-3, finishing #16 in the AP Poll, winning the ACC Championship based on record, and winning the Liberty Bowl 31-18 vs Kansas. In 1974, went 9-2-1, finishing #11 in the AP Poll and tying 31-31 in the Astro-Bluebonnet Bowl vs Houston. In 1975, went 7-4-1, losing the Peach Bowl 13-10 vs West Virginia. Overall record: 33-12-3. 4 bowl game appearances, 2 bowl game wins, and one ACC Championship.

1976: Head Coach for the New York Jets of the NFL. Went 3-10 with the Jets, before resigning before their final game of the season.

1977-1983: Head Coach for Arkansas. 1977, went 11-1, finishing #3 in the AP Poll and winning the Orange Bowl 31-6 vs Oklahoma. Deemed National Champions in the Rothman (FACT) Poll, but it is unclaimed. 1978, went 9-2-1, finishing #11 in the AP Poll and tying 10-10 with UCLA in the Fiesta Bowl. 1979, went 10-2, finishing #8 in the AP Poll, co-winning the Southwestern Conference, and losing the Sugar Bowl 24-9 vs Alabama. 1980, went 7-5 and won the Hall of Fame Classic 34-15 vs Tulane. 1981, went 8-4, losing the Gator Bowl 31-27 vs North Carolina. 1982, went 9-2-1, finishing #9 in the AP Poll and winning the Astro-Bluebonnet Bowl 28-24 vs Florida. 1983, went 6-5. Overall Record: 60-21-2. Had 6 bowl game appearances, 3 bowl game wins, 1 Southwestern Conference Championship, and one unclaimed National Championship.

1984-1985: Head Coach for Minnesota. 1984, went 4-7. 1985, went 7-5, winning the Independence Bowl 20-13 vs Clemson. Overall Record: 11-12. 1 bowl game appearance and 1 bowl game win.

1999-2004: Head Coach for South Carolina. 1999, went 0-11. 2000, went 8-4, finishing #19 in the AP Poll, and winning the Outback Bowl 24-7 vs Ohio State. 2001, went 9-3, finishing #13 in the AP Poll, and winning the Outback Bowl 31-28 vs Ohio State. 2002, went 5-7. 2003, went 5-7. 2004, went 6-5. Overall Record: 33-37. 2 bowl game appearances and 2 bowl game wins.

Holtz retired for good from football on November 20, 2004, after his final game vs Clemson, where a brawl vs South Carolina and Clemson took place. The two teams penalized themselves by declining any bowl invite. Holtz died on March 4, 2026. Rest in peace.
