Caves and Cliffs (1.17) - Glowsquid (It's AI is the same as Squid and it lacks features on it's own unfortunately which is a waste of a chance to update Squids in general.)
Caves and Cliffs (1.18) - Iceologer (Snowy Mountains as the main Update? Perfect chance to add this guy on top of these in his own Structure..)
The Wild Update (1.19) - Moobloom (Perfect opportunity and if they added a new Birch Forest Variant I bet the Community would have actually liked the Update)
