I also thought of a Mechanical Gerson-like (bot built by Alphys ofc) with a spiky metal shell.
Seeing as Gerson retired, this mechanical armor makes people think he is still fighting.
(His shop will be a hidden place, like the Temmie Village in Undertale)

I released the modded version of the fangame with some small changes, all of them are in the article of this post!
I hope it's not more buggy than the original due to some mistakes I could have made
