Amazing Mirror will always be my favorite. It introduced me to Kirby before even Smash Bros did, and I fell in love with the openness of the world and flexibility of the copy abilities. And in a way, I feel like the series hasn't reached that high ever since. I was shown the black sheep before anything else, so everything after (and before) was a step down.
The 2 others games I think match that energy are Planet Robobot and Super Star Ultra. I like Adventure/Nightmare in Dreamland as well for its simplicity/great pacing, but besides that, the series is too comfortable being "safe", if that makes sense.
Anyways, let's all discuss this if you feel like it!
P.S. - Air Ride is amazing as well, love that game a lot
