So the start of the game, Once upon a time.
I've got to say it is a great start to this game for many reasons. however it sounds a bit generic for an rpg following lots of clichés which is not what undertale is going for. undertale is a game that tries to mess with how you think an rpg works.
The song is obviously inspired by mother 1's mother earth song MOTHER 1 : Mother Earth | SOUNDTRACK - EXTENDED (youtube.com)
it has the same feel to it as well with the leading note being deep and giving out a sorta fuzzy feeling if you get what i mean.
with both of these games after listening to this after clearing the game gives quite a comforting vibe. kind of like welcoming you back which is why that warm fuzzy feeling seems to be what the composer is trying to achieve.
now where was I... oh yeah Once upon a time.
the second section at 0:27 is where more instruments kick in
those first 3 notes after slide you into another melody giving off a sense of mystery as this is where the fallen human looks into the cave on mount ebott. "i met an evil talking flower in a pot.". nah we aren't on flowey just yet.
oh yeah the drums actually play the first few notes of the final section in the background. speaking of the third section
those lighter notes that play in the third section show that the fallen human is well... falling as the story falls into the background and the iconic undertale logo appears with the iconic logo sound.
Now we have finished with that analysis lets look at what the community do with this song.

if you do not know already undertale yellow is the story of the yellow soul human who fell before frisk did. which means that this would be similar but different to the og once upon a time.
which shows as the first instruments are like once upon a time but slightly altered.
which is what this song is really altered once upon a time... or that is what it seems to be but at 0:16 a fade note starts to pick up and it gives you a new sense one of JUSTICE
jokes a side though.
the next section is kind of different to the original with what i believe to be the yellow soul leitmotif that appears in your best nightmare. there is then an alter in the melody for a bit before going back to once upon a times usual structure what is this... well it is the justice leitmotif in disguise very clever of the composers.
then it picks up and goes into a whole other thing completely different from once upon a time. kind of like when... and spoilers for undertale yellow
clover falls through a hole to get to the dark ruins
it is a very justice filled tune which unfortunately i don't have a lot to say about then it fades out playing the your best nightmare yellow soul tune

this is made by a great youtuber know as siivagunner and if you do not get the joke well you need to study the story of undertale a bit better.
but in all seriousness this is a great rip. using all of undertales key instruments in a way to explain well.... the story of undertale. And it uses the different instruments belonging to each character at relatively the same time the character appears in the animation. for example when it says "i'll slaughter sans and squash his bro like a roach" it plays the sans instruments. just genius well done siivagunner.
now on a more serious note. we have starting point from undertale cyan by @cost3r (yes i have a streak of mentioning him)
it is a song of patience you know what that means! long waiting to get to the main melody -_- but here it is done very very well. as it is used to build up the melodies to the quiet once upon a time tune. then it goes of on its own thing.
the bass however is quite loud which I'm not the biggest fan of. then it fades off and oh no moonlight melee started playing ahahahah.
but hey i do not dislike the song in fact i really enjoy it.
last but not least we have our history from ts!underswap by @teamswitched if you do not know ts!underswap is a very popular underswap take and if you are braindead and don't know what an underswap is it is an au where someone swaps characters like sans and papyrus around. ts!underswap took that concept and built it into something much more with fantastic original characters like count koffin k my beloved.
it starts with the same type of notes like the og once upon a time does but then.... a melody plays and it keeps going building up and using each of the melodies together to make you interested in this incredible take. i cant think of much to say so you should just listen to it yourself and let me know what you think!
