Well Sonic 1 and Sonic 3 (& Knuckles) got remakes of their own (those being Sonic 1 Forever and Sonic 3 A.I.R. respectively) so I guess my choice would be either Sonic 2 or Sonic CD
Edit: So it turns out that Sonic 2 does have a remake sooooo yeah
