Basically, I am going to explain why George (or specifically the Jolly 1 variant) gets a lot of lore relevance in Curse of Mikhail and Apiphobia

Curse of Mikhail

Basically, in Curse of Mikhail, George from Jolly 1 comes back as "Mikhail", or "Possessed George", and appears in Night 5, making him some sort of a final boss of the game. The reason why I picked George was because Jolly and Tweetie already had nightmare versions, and it didn't look right with Maxie. Wendy and Crimson were also considered, but they were already shadows. however, I replaced them with the shadow versions of the Withereds from Jolly 3: Chapter 1. Ivan never really does much with George in lore, as the lore is mostly devoted to Jolly and Antonette, so I decided to make George as important to the fanmade extended lore as Jolly ever was, meaning Jolly, Antonette and and George share the extended lore. As of why George is missing most of his suit in CoM is because he is possessed by Mikhail Schmidt, the nightguard in Jolly 1, who in my timeline got killed by George after the incident which Jolly killed a minor, and he is trying to destroy himself in order to free his soul.

Apiphobia

I won't explain that much here because the game is still in development, but do you know that demented-looking George that you saw in the first 2018 mode teaser? Well, he is related to the incident which related to Mikhail's death.

Why George?

Because I am trying to foreshadow the eventual spin-off game relating to George, where he is renamed "Georgiger" in order to make him sound a little bit more original. Basically, I'm going the Jollibee's route, but with George instead of Jolly, since George is not based on an existing fast-food diner mascot, so I might be safe from copyright infringement. I also plan on having four kids in the game just like Jollibee's, but they won't be the same kids from Jollibee's. They will be different kids. I also plan on Georgiger's to take place at town square instead of a restaurant. So yeah, expect the Georgiger game to begin being teased after Apiphobia comes out, concluding the J-0114 saga for good.
