Why do some game remove demos or make demo save incompatible w/ the official release after selling the game while some game still keep demos or make the save compatible?

Hey I have a question, I have been planing a game called ‘Off the grid’ And It’s about you Willliam Benson Being captured in a facility called The Grid Run by Mark Grave and you have to fight robots and guards to escape. Do you like the game idea?

Does anybody know where a good place to start learning how to design my own game would be, I have no prior experience, I'm just looking for new projects to get into, thank you :)
