I personally, like quality builds, to have a quality build you need at least 27 strength and 40 dexterity.
You can find the soul of a great hero near the Cursed Bookcases. One found in NG+ where the Millwood Chieftain is in Ashes of Ariandel. One found in NG+ on the stair case the 6 Harald Legion Knights guard in The Ringed City.
