I said this in my video, but I only really introduced the quests idea as a way to tell a "story" through this game. My plan was to have the daily quests, progressively, further the ultimate battle against the Yellow Jackets and lead to a conclusion where the Yellow Jackets have been reduced to a minor threat and Hensen is free to keep them in check himself (i.e you can still play). This I felt was straying pretty far from what I wanted this game to be.
What I want Hensen Hopper to be is a classic Shmup game modernized. The goal is to simply gain as high of a score as you can by defeating the enemies. No quests needed, just an endless scrolling map and a variety of enemies to battle!
I will still keep Hensen's backstory where the Yellow Jackets killed his pet aphid leading to him mercilessly hunting them seeking to destroy their entire operation in the game somehow, maybe I'll do a cutscene the first time you load the game that you can re-view through a button in the main menu to communicate this to the player.
