You can play as 3 Characters:

Matticraft (Easy Mode): Has Access to Tranquilizer Darts, Stuns the AnimaAmalgams for 30 seconds, doesn't starve

Kaisa (Medium Mode): has access to Stun Spells, Stuns the AnimaAlmagams for 10 seconds, looses hunger slowly

Anders (Hard Mode): Has access to Pepper Spray, Stuns the AnimaAlmagams for 5 Seconds, looses hunger during a period of time.
