Just finished adding/fixing a ton of stuff on that todo list, there's so much I couldn't fit it into a post, so check the full article for that instead! (keep in mind a new build with these changes will not be coming until Aerialis is complete)

Full changes:

Gerson shop animations added
Undyne battle sprite finalized and added
Undyne dialogue sprite updated to match new battle sprite, and armorless (date) variants are added
Human-shaped hologram joke added to first Sans and Papyrus encounter, rather than Sans just immediately confirming the human to Papyrus
Gauntlet of deadly terror dialogue refreshed!
Undyne in her date now notices the electro-dampening fluid if you have it with you-
The music when Mad Dummy first appears was previously copied from Undertale, now it's a remix

Next up

Due to Gamejolt sucking really bad, I can't finish the upload of 5.04. I tried yesterday and today, and it still broken. This update fixes that new chaotic route bug introduced in 5.03.

Facial expressions for another character are done! Only one character left to add faces for in the next demo.

Return of the pipe puzzle from SOTS, now repurposed for Petrichor! Will be in the next demo. (this pipe layout is completely temporary and for testing)

And now, the other character's facial expressions are done as well! All characters now have walk sprites, dialogue sounds, and facial expressions, which means I can freely write the rest of the next demo dialogue.
