My FAVORITE enemy design in gaming would have to be a Peahat from The Legend of Zelda: Ocarina of Time because of the COOL spinning blades!!! 
Every once in a while, I think "Oh, I'm supposed to be working on the next EBC posts."
Then I forget and make something like this instead.
Sprites in purple are from Deltarune, ones in yellow are made by me.

There are so many enemy designs to choose from!
I would say the Shiekah Guardian from TLOZ: Breath of the Wild. They are scary when you first encounter them & that music when they spot you.
